Love my parents, those dorks :)

For Father's Day, I made these cute cupcake hamburgers inspired by this cute and clever post by Bakerella!
"Lettuce" see how cute these are gonna be, hehe.

Mustardizing the burgers.

Steve and I went to brunch at Miss Shirley's in Roland Park. This was my second time and Steve's first... I wanted to prove to him that there are some really good places to eat in Baltimore Co. not just in Howard Co. :P

For appetizers we got savory grits with marscapone cheese, chives, and bacon & baked figs with balsamic vinegar, goat cheese, and ham. Delicious!

For our main course Steve got the Soft Shell Shirley-Feller and I got the Egg White Napolean Stack.

Sugar Plum's recent post about her trip to Vegas inspired me to post pics of my trip there in March. It was my first time there and didn't get to see and do everything I wanted, but the city is just too darn big and busy!

We went to the Penn & Teller show and met them after the show, very cool. Did a TON of eating and walking around too, not so much gambling though, which is probably a good thing!

One of the many waterfalls at The Wynn.

Excited about my first Del Taco experience.

Our hotel.

Treasure Island.

The Bellagio fountains, probably my favorite part of the trip.

French macarons from Bouchon Bakery at The Venetian, yummy!

My reaction to the 27 foot tall chocolate fountain at The Bellagio.

The fountain! He is in awe.

Our first stop in Vegas (1030 am), Fat Tuesday, a frozen drink bar.

Todai Japanese & Sushi buffet in the Miracle Mile Shops attached to our hotel.

Yesterday my honey was having a rough day at work so I made him banana bread that he had been requesting for some time now :)

I used the recipe for Banana Bread from The King Arthur Flour Baker's Companion (p. 80). I substituted equal parts applesauce for the oil and reduced the amount of sugar to 3/4 cup. I also used buttermilk, 1/2 cup of walnuts, and baked it in two 8.5 x 4.5 loaf pans.

I didn't have buttermilk on hand, but I used a little bit of vinegar and added it to the 2% milk I had and voila! buttermilk. See the link for the how-to.

2 large eggs
1 cup sugar
1/3 cup vegetable oil
1 cup (2-3 large) very ripe mashed banana
2 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
2 2/3 cup unbleached all purpose flour
1 cup yogurt, buttermilk, or sour cream
1 cup chopped walnuts (optional)

1. Preheat the oven to 350 F.

2. In a medium-sized bowl, beat together the eggs, sugar, and oil. Blend in the mashed banana and vanilla. Whisk together and then sift (it's important that these be thoroughly combined) the baking soda, baking powder, salt, cinnamon, nutmeg, and flour. Add all at once to the banana mixture. Mix quickly but thoroughly, then stir in the buttermilk and walnuts, mixing until just combined.

3. Pour the batter equally into two greased and floured 8.5 x 4.5 in. loaf pans. Bake the bread for about 40 minutes or until the center of a cake tester comes out clean. If the bread begins to brown too quickly, tent it with aluminum foil after 25 minutes in the oven.

4. When the bread tests done, remove it from the oven and place on a rack for 15 minutes; after 15 minutes, remove the bread from its pan and place on the rack to finish cooling completely.

Yesterday we celebrated Jen's bachelorette party by going to a tour and tasting at Boordy Vineyard where I learned that Boordy is Maryland's first Winery and Vineyard. Then we went to dinner at The Melting Pot. I'm honored to be a bridesmaid and can't wait til the wedding in two weeks!
My parents, brother, and Steve ordered Pat's while I was at dinner and I just had to post this picture of a large calzone. This thing had to weight 5lbs, it could easily feed a family of six!

Today, after a traditional Sunday breakfast cooked by my dad Steve and I did a few errands and he bought a bike! Steve put my bike carrier on my car then we went riding around Honeygo Run.
We were gonna come back and go swimming in my pool, but it needed to be vacuumed and filled a bit more... bummer. I'm making a seven layer southwestern salad for dinner to accompany our panninis :P

Just saying hi from my new MacbookPro! :)

I went to Newark, DE with Steve today to purchase this baby tax free. Apple is having a promo for college students who buy any computer... You buy an iPod touch with your computer and get a rebate for the price of the iPod and $100 dollars towards the purchase of a printer. I got a printer that costs $99 so, I basically got that for free too. Total cost of a 13" Macbook Pro (new version just released Monday) + 8GB iPod touch + HP all in one printer = ~$1400, $1099 after rebates!

Today I woke up early and went to BodyJAM at the gym then grabbed a Dunkin Donuts French Vanilla iced coffee for only .99 cents! This was one of the best FVICs I've ever had, props to the girl at the DD on Honeygo Blvd, you made the perfect iced coffee, just the way I like it.... a little cream and 2 Splenda. I run on Dunkin' :) After my morning perk, I returned a library book and mailed a card to Beth.

Came back home, showered, had lunch, then went to pick up my lenses from the eye doctor's office then I attempted to find shoes to match my bridesmaid dress for Jen's wedding (less than 3 weeks away!) with no success. The two bridal shops I went to were closed on Wednesday. Really? Wednesday? Why would you choose to be off in the middle of the week, why not be closed on Monday?

Started to make guacamole, corn bread/pudding, Spanish rice, and marinade the fish for the taco fiesta dinner. Steve came over after work and here I am blogging about my day while he's watching Wipeout. We were trying to plan a trip, but with my busy summer schedule it's pretty freaking frustrating.

Maggie is doing a lot better the past day and a half. She is getting up more on her own and is trying to bear more weight on her right hind leg.
