Banana Bread Muffins

There were some over ripe bananas in the fruit basket at Steve's so instead of just throwing them away, I used them to make banana bread-muffins. I got the recipe from Simply Recipes. I usually like to mess around with recipes, but this time the only thing I changed was adding a few sprinkles of cinnamon and took the recommendation of a Simply Recipes reader who commented on how to make muffins instead of loaves. I think this recipe is a winner.

Banana Bread Recipe

  1. 3 or 4 ripe bananas, smashed
  2. 1/3 cup melted butter
  3. 1 cup sugar (can easily reduce to 3/4 cup)
  4. 1 egg, beaten
  5. 1 teaspoon vanilla
  6. 1 teaspoon baking soda
  7. Pinch of salt
  8. 1 1/2 cups of all-purpose flour


No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
